Todays quick and easy recipe for a super healthy Chia seed muesli that gives me all the energy I need in the morning! This delicious breakfast choice is a perfect dish to start the day. Chia seeds are very versatile to use - they can be sprinkled dry over cut fruits or added to salads.
For this recipe though, I mix the Chia seeds into plain non fat LC1 Yoghurt (you can use any yoghurt of your choice) and let them soak for about 30 minutes - they can also easily be soaked overnight. By soaking the Chia seeds in the yoghurt, or any other liquid, they develop a gel like coating that lateron gives your muesli an amazing texture without being soggy.
Its easy to eat, very good for your digestion, and very energizing. Without consuming a lot of calories, I feel saturated and can start my day with a good energy level. Eating Chia for breakfast also keeps me from craving snacks and chocolates while I am in the office until lunchtime. Its also a great meal before or even after workouts! In one sentence: its a light, well balanced superfood option that kills off the naughty cravings.
I love to add more seeds, like sesame or sunflower seeds, crushed nuts, raisins and berries as a topping. The seeds and raisins I briefly roast with some honey and sesame oil before adding it onto the chiayoghurt base. I like the mixture of hot and cold and the different textures.
Its a great, and 100% healthy meal that tastes like a cheatmeal.
